Ingredients

1 large potato, cooked and mashed

50g plain flour

1 egg

100ml double cream

1 small onion, peeled and finely chopped

100g bacon, diced into small pieces

100g frozen peas

60g grated mature cheddar

30g butter, plus a little extra for frying

Sea salt and black pepper

Method

After mashing the potato, leave it to cool. When it is cool, add plain flour, egg and double cream. Mix well. Put to one side while you melt the butter and fry the onion and bacon until light brown. Cool, and add to the potato mixture. Season to taste. Add the cheese and peas. Melt a little butter in a non-stick frying pan. When the butter is frothing, add dessertspoons of the mixture to the pan and fry on each side until golden Delicious with sausages or bacon!

Makes approximately 6-8 fritters

Tips

The less water you use when cooking peas, the less vitamin C is lost. Steaming helps to conserve this vitamin.

When boiling frozen peas, add enough water to cover, bring to the boil and then cover and simmer for 3 minutes. To microwave 227 grams (8oz) of frozen peas add 15ml (1 tablespoon) of water, place in a non metallic container and cover. Cook on full power for 4 minutes (750W) or 4 1/2 minutes (650W)
